Recipes: Breakfast Casserole; Home-Style Green Bean Bake; and Chocolate Caramel Cheesecake
On the 16th and 17th we went to Alexandria for the baptisms of our first great-grandchild Carter Daniel Mesner and his mother Tina. All week long they had been predicting not very nice weather but Saturday morning the sun was shining brightly and it appeared to be a very nice day. Alexandria has been in the center of lots of snow and needless to say they were getting rather weary of it and wondering where to put the piles next time. Their consolation was they would get the snow but southern Minnesota would have the flooding from it. Sunday was bright and clear except for ground drifting making for quite icy roads about the first 40 miles on the way home. Daniel and Tina hosted a reception in the breakfast room at the American Inn for family and friends. They brought in the food of meat and cheese trays, potato salad, pistachio salad, chips, cake and punch. Of course, since it was St. Patrick’s Day it was green salad and punch and decorations of shamrocks, green hats for candy, etc. The green cake (blue frosting for Carter) was baked in a 9x13 pan and cut into the shape of a cross.
